What is polenta? Polenta is a word used in Italy and Latin America to mean a form of ground corn as well as a cooked dish made from the ground corn. Traditional polenta is made by adding dry polenta to simmering liquid, usually in the ratio of 3 parts liquid to 1 part polenta and stirring on the heat until the polenta reaches a consistency like thick porridge. A variety of liquids work equally well as a base, including water, chicken broth, milk, beef broth and vegetable broth. Polenta makes an excellent main meal or side dish. It absorbs sauces and juices especially well and is a substitute for pasta, cous cous and rice. Italians serve it straight from the pot with any pasta sauce they would serve with pasta. My favorite polentaJul 22, 2010 This polenta has a great flavor and cooks in less than five minutes. The texture is creamy and not too grainy. I love that it's organic, especially since corn is one of the most genetically modified crops. This polenta is super with sun-dried tomatoes, basil, and garlic for dinner, and it's great for breakfast with fresh blueberries mixed in and a light pouring of maple syrup. I've tried other polenta brands, and this one is definitely the smoothest.
This isn't pabulum fodderMay 29, 2010 De la Estancia Organic Polenta is the best polenta I have ever purchased. I wanted a fine grind to shorten the cooking time, especially in my solar cooker. It was also interesting to read in the description that the corn has a long growing season: there has to be a good reason for that--more trace nutrients? better taste? heirloom seed? The taste is great and well incorporated into favorite recipes. A great purchase!
Just like homeApr 03, 2010 I'm from Brazil and grown up with a lot of polenta but after coming to US i had problems finding something that produced the same creamy texture i was used to. I didnt want to use regular corn since most of it is genetically modified. I stayed with local ground heirloom corn from small farms which is very tasty but didnt remind of home.
i was very happy when i come across De La Estancia polenta. Now everytime I'm homesick I can just scoop some in a pot and its ready in a minute. And it works great for baking too.
De la Estancia Orgaic PolentaNov 24, 2009 When I was little, my Mom used to make a polenta dish that was
not creamy, but thicker texture. She'd layer it in a bowl with
spaghetti sauce and top it with pork chops cooked in the sauce.
This product has the texture, the taste of years gone by. I rate
this a 5* and long-time in finding it.

Minority ReportJul 17, 2008 Over time, my family has changed its opinion a bit about this polenta. It is an extremely fine grind, too fine for our taste. Bob's Red Mill polenta can be ready in ten minutes and doesn't strike us as pasty. The flavor of De la Estancia is excellent though. I have begun to use it instead of fine cornmeal in baked goods. For example, Martha Stewart has a wonderful, simple recipe for a blackberry cornmeal cake.
